OverviewThe overall purpose of the Deputy Retail Manager role is to ensure the efficient and profitable operation of our Retail units within the department. This includes managing the sale of liquor and food across various outlets, ensuring compliance with regulatory and safety standards, and enhancing the customer experience. The role also involves overseeing retail operations during live events, coordinating staff, inventory, and logistics to meet event-specific demands. Ultimately, the Deputy Retail Manager is responsible for driving sales, maintaining high service standards, and ensuring seamless retail operations during all live events. Responsibilities
Able to consult effectively with senior stakeholders, contractors, and partners. Maintain day-to-day contact with the venue client to enable close working relationships; confident speaker able to deal with all stakeholders. Support the sales team to develop financially sound bids and proposals and sign off final agreements to ensure we deliver operationally sound contracts. Understand and support the ordering process and that delivery schedules are updated, and orders placed in time. Understand and analyze COS, VPM, liquor yields to aid decision making. Be responsible for non-live setup days and ensure all catering areas in the venue are ready and presentable during client show rounds and pre-operation. Work with the Head of Retail to manage rotas, stock and stock-taking schedules. Drive top line / SPH while controlling production and wastage. Display a positive guest attitude and participate in CSR, sustainability, equality, and diversity initiatives. Collaborate with the Back of House Manager to manage departmental maintenance logs and ensure timely resolutions. Attend training sessions and client meetings as required. Deliver effective, motivational, and informative pre-shift briefings to managers. Communicate strategy to the team and implement improvements to maximize performance and customer satisfaction. Ensure Challenge 25 and RAS compliance. Take responsibility for health and safety regulations within the rooms division, maintaining records and risk assessments; report hazards immediately. Ensure health, safety & hygiene rules are followed as a priority. Resolve operational issues promptly; demonstrate initiative, multitask, and prioritize. Address customer feedback positively and keep the Venue Director informed as appropriate. Provide progress updates to the General Manager as required. Consult with the wider team to ensure venue operations requirements are fully covered. Finance: Drive spends per transaction by maximizing sales opportunities during planning and operations for events. Manage labour scheduling and forecast labour spend in collaboration with HR and Staffing. Recommend budgets and future Capex / Opex planning. Own all costs associated with the operations under management and ensure teams understand financial performance. Manage all labour scheduling for FOH, BOH, culinary, logistics, people team, commercial and H&S. Investigate revenue shortfalls and cost overruns and act where necessary. Monitor and improve operating standards in the Concessions area, including service, product lines and procedures. Maintain cost control in line with targets and minimize operating costs through appropriate use of equipment and products. Ensure compliance with profit protection procedures and venue security procedures. Ensure stock takes are completed by deadlines and variances investigated. Operate within budget restrictions and ensure PCI DSS controls and profit protection measures are in place.
People
Build, lead, and manage an effective team with clear succession and development plans. Foster positive team morale through open communication with managers, supervisors, and team members. Provide staff training and development; ensure Concessions team uses upselling techniques. Provide regular performance feedback and participate in recruitment, including interviews; promote equality, diversity, and inclusion. Conduct team PDRs and deliver engaging IT-enabled training sessions. Collaborate with recruitment and promote equality, diversity, and inclusion.
Business Development
Recommend and develop new products reflecting current trends to improve the business. Develop new service styles and opportunities to support growth for Levy and the client. Support and develop the company’s image and standing in the local and business community.
Miscellaneous
Ensure lieu days are taken within company periods; holidays are taken as needed for business and not carried forward. Act as an ambassador for the company and support client initiatives related to catering. Demonstrate financial controls, forecasting, and commercial modelling experience. Experience leading a team of at least 8 delivering high-quality food and customer experience. Excellent communication and stakeholder engagement skills; strong IT skills. Sound knowledge of health, safety, and food safety in a foodservice environment. Strong commercial acumen with a track record of increasing sales and profitability. Able to motivate and inspire people at all levels and flexible to changing environments.
Desirable
NVQ Level 3 or equivalent in Hospitality or management. Experience in high-level customer care environments and working with clients under contractual terms. Experience managing multiple operations and service streams.
