Role PurposeThe overall purpose of the Deputy Retail Manager role is to ensure the efficient and profitable operation of our Retail units within the department. This includes managing the sale of liquor and food across various outlets, ensuring compliance with all regulatory and safety standards, and enhancing the customer experience. The role also involves overseeing retail operations during live events, coordinating staff, inventory, and logistics to meet event-specific demands. Ultimately, the Deputy Retail Manager is responsible for driving sales, maintaining high service standards, and ensuring seamless retail operations during all live events. Consult effectively with senior stakeholders, contractors, and partners. Maintain day-to-day contact with the venue client to foster strong working relationships; confidently engage with stakeholders. Support the sales team to develop financially sound bids and proposals and sign off final agreements to ensure operationally sound contracts. Understand and manage the ordering process; ensure timely delivery schedules and orders. Analyze costs and yields (COS, VPM, liquor yields) to aid decision making. Oversee non-live setup days; ensure catering areas are ready and presentable before operation goes live. Work with Head of Retail to manage rotas, stock, and stock-taking schedules. Drive top line and sales per head while controlling production and wastage. Maintain a positive guest attitude; participate in CSR, sustainability, equality, and diversity initiatives. Collaborate with Back of House Manager on maintenance logs and timely resolutions. Attend training sessions and client meetings as required. Deliver effective pre-shift briefings to managers and communicate strategy to the team. Ensure compliance with health and safety regulations; maintain risk assessments and report hazards. Address operational issues promptly with initiative and prioritization. Handle customer feedback constructively and update the Venue Director as appropriate. Coordinate with the wider team to cover venue operations and requirements.
Finance
Maximise spends per transaction by leveraging sales opportunities during events. Manage labour scheduling with HR to control labour spend and forecasting. Contribute to budgets and future Capex / Opex planning. Manage costs under your operations and ensure awareness of financial performance across the team. Monitor and improve operating standards in the Concessions area; control operating costs in line with targets. Ensure stock takes are completed by deadlines and variances investigated. Comply with Profit Protection procedures and venue security. Oversee PCI DSS controls and related measures.
People
Build, lead, and develop an effective team with succession planning. Foster positive team morale through clear communication with managers and staff. Provide staff training and development; coach on upselling techniques. Give regular performance feedback and participate in recruitment with a focus on equality, diversity, and inclusion. Conduct PDRs and facilitate meetings; maintain clear team communications; capable of IT-enabled training and presentations.
Business Development
Recommend and develop new products and service styles to support business growth for Levy and the client. Support Levy and client brand image within the local and business community.
Miscellaneous
Ensure holiday planning complies with business needs; act as an ambassador for the company. Support with client initiatives and community engagement.
What We’re Looking For
Essential Develop financial controls, forecasting, and commercial modelling experience. Experience leading a team of at least 8 delivering food and customer excellence. Excellent communication and stakeholder engagement skills. Strong IT skills and knowledge of health, safety, and food safety in a foodservice setting. Strong commercial acumen with ability to increase sales and profitability. Motivate and inspire teams; fully flexible for changing environments. Ability to adapt to ever-changing venues and circumstances.
Desirable NVQ Level 3 or equivalent in Hospitality or management-related discipline. Experience in high levels of customer care and working with a client on contractual terms. Experience managing multiple operations or service streams.
